Beef Stroganoff - Run Upcote Special

Beef Stroganoff (or just mushroom if you’re veggies).This is a great dish for pre or post running. Have it with pasta or rice, bread to soak it up or just on it’s own. The ingredients below are for my mega tasty version but if you wanna cut some of the bits out then I won’t take offence and we can cook along regardless.

 
 

Recipe

Ingredients for 4 people:

olive oil

1 large onion, finely sliced

3 garlic cloves, finely chopped

1 beef stock cube

2 tsp smoked paprika

1 tbsp tomato purée

400ml beef stock

150g chestnut mushrooms, sliced

1 tbsp Dijon mustard

2 rump steaks (trimmed if you wanna be healthier)

60g cornichons (small gherkins), sliced

75ml half-fat crème fraîche

2 tbsp finely chopped flatleaf parsley

salt and black pepper

To serve (optional)

160g basmati rice, freshly cooked or microwave a packet.
